Ingredients

  • 1 large carrot (~200g), scrubbed and grated
  • 1/2 red onion, finely diced
  • 1 tsp chili flakes
  • 2 TBSP fresh coriander (or 1 tp dried)
  • 1 tsp ground cumin
  • salt & pepper
  • 1 large egg
  • 1 cup flour
  • 2 tsp baking power (not soda!)
  • 2/3 cup milk
  • Cold pressed rapeseed or EVOO.

Serves : 1

This recipe uses carrots, but feel free to use other veg & spice combinations... for example: shopped prawns, peas, jalepeño, cumin, and coriander. I added some fresh corn & parsley, and topped with a salad & mozzarella balls.

Cooking Steps

    Combine all the ingredients.

    Let rest 8 minutes.

    Heat oil in a pan. Drop pikelet-size dollops into the pan. Brown on each side.

    Serve with dollops of yoghurt and hummus sprinkled with dukkah... or with a crunchy fresh salad... or topped with fried halloumi...
