Fab Fritters

This recipe uses carrots, but feel free to use other veg & spice combinations… for example: shopped prawns, peas, jalepeño, cumin, and coriander. I added some fresh corn & parsley, and topped with a salad & mozzarella balls.

Cooking Steps

  1. Combine all the ingredients.
  2. Let rest 8 minutes.
  3. Heat oil in a pan. Drop pikelet-size dollops into the pan. Brown on each side.
  4. Serve with dollops of yoghurt and hummus sprinkled with dukkah… or with a crunchy fresh salad… or topped with fried halloumi.
