Ingredients

  • 300 g pasta of your choice
  • 2 TBSP cold-pressed olive oil
  • 2 cloves garlic, minced
  • 4 spring onions, chopped
  • 1 jar (~340g) chopped artichokes, drained
  • 2 TBSP capers
  • 2 anchovy filets, smashed
  • 2 cups each rocket and baby spinach
  • 3 TBSP fresh basil, thinly sliced
  • zest and juice of 1 lemon
  • chili flakes
  • 4 servings of cooked prawns, chicken, or fresh fish; or canned tuna

Another take on traditional puttanesca.

Cooking Steps

    Start by getting the pasta cooking in salty boiling water.

    In a large pan, heat the oil. Add the garlic and onions. Cook until the onions have softened.

    Add the artichoke, capers, and anchovy. Cook until heated through.
  • 4
    By this time the pasta should be done.
  • 5
    Drain the pasta and add to the pan along with the rocket, spinach, basil, lemon, chili flakes, and your protein of choice. Toss to coat. Salt and pepper as you like.
