Ingredients

  • 2 whole oranges
  • 3 tsp mint leaves
  • 5 eggs
  • 225 caster sugar
  • 1 tsp baking powder
  • 280 g ground almond
  • 100 ml Grand Marnier or orange juice
  • dash salt

Cooking Steps

    Quarter the oranges and place in a pot. Just cover with water and bring to a boil. Simmer for 1 hour. Drain and let cool.

    Preheat the oven to 180*C. Line a 26cm cake tin with baking paper.
  • 3
    Blitz the oranges and mint in a food processor.
  • 4
    Combine all the ingredients. Pour into the prepared pan and bake for 45 minutes.
  • 5
    Looks great topped with freeze dried fruit! Also great topped with Greek yoghurt.
