Fab Fritters

This recipe uses carrots, but feel free to use other veg & spice combinations… for example: shopped prawns, peas, jalepeño, cumin, and coriander. I added some fresh corn & parsley, and topped with a salad & mozzarella balls.
Ingredients
- 1 large carrot (~200g), scrubbed and grated
- 1/2 red onion, finely diced
- 1 tsp chili flakes
- 2 tbsp fresh coriander (or 1 tp dried)
- 1 tsp ground cumin
- salt & pepper
- 1 large egg
- 1 cup flour
- 2 tsp baking power (not soda!)
- 2/3 cup milk
- Cold pressed rapeseed or EVOO
Cooking Steps
- Combine all the ingredients.
- Let rest 8 minutes.
- Heat oil in a pan. Drop pikelet-size dollops into the pan. Brown on each side.
- Serve with dollops of yoghurt and hummus sprinkled with dukkah… or with a crunchy fresh salad… or topped with fried halloumi.
