Cooking Steps

  1. Quarter the oranges and place in a pot. Just cover with water and bring to a boil. Simmer for 1 hour. Drain and let cool.
  2. Preheat the oven to 180*C. Line a 26cm cake tin with baking paper.
  3. Blitz the oranges and mint in a food processor.
  4. Combine all the ingredients. Pour into the prepared pan and bake for 45 minutes.
  5. Looks great topped with freeze dried fruit! Also great topped with Greek yoghurt.
