Moroccan Orange Cake

Intense flavour—and gluten free!
Ingredients
- 2 whole oranges
- 3 tsp mint leaves
- 5 eggs
- 225 caster sugar
- 1 tsp baking powder
- 280g ground almond
- 100 ml Grand Marnier or orange juice
- dash salt
Cooking Steps
- Quarter the oranges and place in a pot. Just cover with water and bring to a boil. Simmer for 1 hour. Drain and let cool.
- Preheat the oven to 180*C. Line a 26cm cake tin with baking paper.
- Blitz the oranges and mint in a food processor.
- Combine all the ingredients. Pour into the prepared pan and bake for 45 minutes.
- Looks great topped with freeze dried fruit! Also great topped with Greek yoghurt.
