Pancakes with a Punch

Eggs, ground almond, & peanuts for protein, vitamins, minerals, and healthy fat. Cocoa for phytonutrients. Banana for vitamins, minerals, and fiber. Yum!
Ingredients
- 1 banana, mashed
- 2 eggs
- 1/3 cup milk
- 2/3 cup almond flour
- 1 tbsp cocoa
- 1/2 tsp baking soda
- Dash of salt
- 1 tbsp peanut butter + boiling water
Cooking Steps
- Mix the banana, eggs, milk, almond, cocoa, soda, and salt.
- Let the batter rest 5 minutes.
- Cook pancakes in a non-stick skillet.
- Mix the peanut butter with a tsp of boiling water. Keep mixing in boiling water one tsp at a time until you get to the consistency you like…and drizzle over the top of your pancakes. Top with fresh fruit if you have it!
